Butter Cake

I always make this for my hubby, because he likes having cake and coffee while working at home. He would also bring slices of this and the other cakes I make, to the office. Does that make me a domestic goddess? *sniggers* Yeah, right!

TAKES 1 hour
MAKES 12 servings

1/2 cup butter
1 1/3 cups sugar
5 egg yolks
2 1/4 cups cake flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
3/4 cup milk


STEP 1

Preheat oven to 350 degrees F (177 degrees C). Grease and line a 9x5-inch loaf pan.

STEP 2

Beat the butter until creamy and soft. Gradually add sugar until light and fluffy. Add egg yolks, one at a time, mixing well after each addition.



STEP 3

Sift the cake flour, baking powder and salt together. Add to the creamed mixture alternately with the vanilla and milk. Blend well.

STEP 4

Pour the batter into the prepared pan. Bake in the oven for 40 to 45 minutes or until cake is golden brown.



STEP 5

Remove the cake from the oven and place on a wire rack to cool for about 10 minutes. Then remove the cake from the pan and cool completely.
